You cut prime Fillet of Beef which to our forefathers looked like a Bulls tongue = Bull Tongue in Afrikaans: Bul Tong
(do your seasoning prep and hang it in a cool dark place to dry, these days electric dryers).It originated during the Anglo-Boer war, when they put the meat under the saddle on horseback, so when the horse perspire the salts kept the meat fresh and matured...thank goodness for new technology
